Our Chefs behind Satori

At the helm is Chef Wilson, a rising yakitori chef who has spent years refining his craft under the mentorship of Chef Shyong.  Precise, focused, and approachable, Wilson leads Satori’s grill with a deep respect for traditional Japanese techniques while creating a lively and accessible dining experience.


Guiding the yakitori direction is Chef Shyong, a yakitori specialist with over a decade of experience mastering the art of yakitori. Known for his precision, restraint, and deep respect for traditional Japanese grilling techniques, he has dedicated years to refining his craft over binchotan charcoal. He brings a deep understanding of binchotan grilling, along with meticulous precision and restraint, to both Sapoto and Satori.
Together with Chef Desmond Fong, the visionary behind Sushi Yujo and SHINRAI, the team brings a wider perspective to modern Japanese dining — balancing tradition, creativity, and craftsmanship across every concept.


At Satori, their combined experience comes together in a yakitori-led dining experience built around fire, flavour, and quiet precision.
